"Turkey" Wellington (P, TNT)

I found a box of chicken-stye seitan (wheat meat substitute) in a health food store.

Rolled out a sheet of puff pastry, cut out leg and wing shapes, using the rest of the sheet as an oval base.

Baked the leg and wing shapes until browned and puffed. Dumped the seitan on the puff pastry, drizzled some pareve gravy over and then put a mound of stuffing on top.

Draped the other sheet of puff pastry over all of this, sealed the mound, cut a few slits in the top and baked at 400°F for 15 minutes then finished at 350°F until browned and crisp (about a half hour). Toothpicks to hold on the legs and wings, and I had a full vegetarian turkey to serve my sons. This also looked nice in slices, since there was a layer of "meat" with a nice layer of stuffing.
