Souffle, Spinach II (D, KLP, TNT)
Source: Philadelphia Cream Cheese Wrapper
Serves: 8

1/2 cup chopped onion
1/8 tsp. each salt and pepper
1 clove garlic, minced
3 eggs
1 tbsp. butter or margarine, melted
2 packages (10 oz. each) frozen chopped spinach, thawed, well drained
1 package (8 oz.) Philadelphia cream cheese, softened
1/4 tsp. paprika
8 oz. farmer's cheese
1/8 tsp. ground nutmeg

Cook and stir onion and garlic in butter or margarine until tender.

Beat onion mixture, cream cheese, farmer's cheese, salt and pepper with electric mixer on medium speed until well blended. Add eggs, 1 at a time, mixing well after each addition.

Blend in spinach.

Pour cheese mixture into greased 9" square baking pan. Sprinkle with paprika and nutmeg. Cover. Bake at 325°F for 30 minutes, uncover. Bake an additional 15 minutes.
