Quiche, Spinach for a Crowd (D, TNT)

Serves: 18 to 24

1 package of 3 9" frozen regular pie shells
3 10-oz. packages of frozen chopped spinach
1 2-lb. container of part-skim ricotta cheese
2 8-oz. packages of part-skim shredded mozzarella cheese
1 6-oz. box of French fried onions (regular or cheddar cheese)
1 tbsp. salt (if needed)

Preheat oven to 350°F. Put spinach in microwave and cook 7-8 minutes (just to defrost).

When oven is heated, cut slits in pie shells with knife, then put them in the oven to brown a bit.

When spinach is defrosted, remove excess water with a colander or sieve.

In a huge pot, add the spinach, all of the ricotta, 3/4 of the mozzarella, and 1/2 of the fried onions and mix together until all ingredients are incorporated. (Taste to see if you need salt, then add to taste).

Take the (slightly) browned pie shells out of the oven and fill with the cheese-spinach mixture.

On top of each pie shell, add the remainder of the mozzarella and fried onions. Bake for 45 minutes at 350°F. Cut each quiche into 6 to 8 pieces.
