Quiche, Garden (D, TNT)

Serves: 4 to 6

Egg Mixture Filling:
1-1/2 cups egg substitute
1-1/2 cups skimmed milk
1 tablespoon margarine
1/8 teaspoon each: nutmeg and white pepper

Vegetable Filling:
2 tablespoons margarine
1/4 cup diced onions
1 4-ounce can sliced mushrooms
1/4 cup diced red pepper
1 10-ounce package thawed frozen chopped spinach
1/2 cup diced tomatoes
1/4 teaspoon garlic powder
1 teaspoon salt
1/8 teaspoon white pepper

Combine all ingredients for the egg mixture filling; blend well and set aside.

Melt margarine in large skillet. Add onions, mushrooms and pepper and sauté until lightly golden. Add remaining ingredients; blend well and continue cooking over low heat for about 5 minutes.

Place vegetable mixture into quiche dish [with or without a crust] followed by egg mixture. Dot with margarine. Bake at 350°F for 45 minutes. Remove and cool for 10 minutes before serving.

This is one I am going to make for dinner tonight, since my husband wants light. I am going to make it crustless.
