Quiche, Broccoli-Tomato (D, TNT)

Serves: 6 to 8

2 eggs
1 cup sour cream
1 cup cottage cheese
1/2 cup pancake mix
1/4 cup oil or margarine
Parmesan cheese, grated
Slices of tomato
Raw broccoli
Salt, to taste
Pepper, to taste

Arrange broccoli pieces in bottom of quiche pan.

Combine and mix together the eggs, sour cream, cottage cheese, pancake mix, oil or margarine, salt and pepper and pour mixture over broccoli.

Place sliced tomatoes over the top of mixture and sprinkle with Parmesan cheese.

Bake in a 350°F oven for approximately 30 minutes.

Poster's Notes:
For the amount of slices of tomato and raw broccoli, it depends on your quiche pan.

The wonderful part of this recipe is that you can use any kind of sour cream and/or cottage cheese--from full fat to low fat to NO FAT and the quiche is the same--DELICIOUS!!!

I have also added sliced sauteed mushrooms to the cheese mixture before pouring over broccoli.
