Club Sandwich, Portobello (D)

4 Portobello mushroom caps (about 4" across)
1 red bell pepper, cut in 4ths
2 cloves garlic, minced
2 tablespoons balsamic vinegar
2 tablespoons lemon juice
2 tablespoons water
1 teaspoon extra virgin olive oil
2 teaspoons dried Italian seasoning
1 teaspoon fresh rosemary, minced
1/2 teaspoon ground black pepper
4 Kaiser rolls or onion buns
4 tablespoons mayonnaise or reduced calorie mayonnaise
4 slices Provolone cheese
2 leaves Romaine lettuce leaves, halved
4 slices tomato

Combine first 10 ingredients in a large plastic bag.

Seal and marinate 30 minutes. Remove mushrooms and bell peppers from bag, reserving marinade.

Heat grill. (A bit of cooking spray on the grill rack will help with sticking.)

Place mushrooms and bell pepper on grill and grill for 6 minutes on each side or until mushrooms are browned and the bell peppers slightly grilled. Baste the mushrooms occasionally with reserved marinade.

Spread 1 tablespoon of mayonnaise over cut sides of rolls.

Place 1 mushroom cap on bottom half of roll; top with 1 cheese slice, 1 lettuce half, 1 tomato slice, and roll top.

Repeat for the other three sandwiches.
