"Pizza," Spinach and Cheese (D, TNT)
Source: An idea from a NYC restaurant
Yield: 1 "pizza" (multiply as needed)

Olive oil flavored cooking spray or olive oil for coating baking sheet
1 tsp. olive oil
3/4 cup baby spinach leaves (or flat-leaf spinach leaves, or greens of choice), washed and dried
1 6" to 8" flour tortilla
2-3/4 ounces fresh goat cheese, sliced 1/4 inch thick (although not as flavorsome, whipped cream cheese can be substituted)
Kosher salt (optional)
Freshly ground black pepper (optional)

Preheat oven to 400°F. Spray a baking sheet with oil or cooking spray (or lightly brush with with olive oil).

In medium bowl, toss spinach with teaspoon of oil until well coated.

Place tortilla on prepared baking sheet. Top with spinach and cheese. If desired, season with salt and pepper.

Bake until cheese is golden brown and bubbling (about 10 minutes).

Variation: If using whipped cream cheese, you can sprinkle with freshly shredded herbs.

Several years ago, mystery author Aimee Thurlo's editors took her to a restaurant in the FlatIron District of NYC, and she raved about the spinach and cheese pizza with a tortilla-like crust. I dashed over to try it, and loved it as much as she had. I subsequently found a similar dish online, and both Aimee and I lost no time trying it. It is as delicious as the restaurant version.

I have since adapted it to use available ingredients, and it always turns out. The measurements are merely a guideline - there is no need to measure.
