"Pizza," Portobello (D, KLP, TNT)

Serves: Depends how many mushrooms you use

Archivists' Note: We've also seen this spelled Portabello and Portobella]

1 to 2 very large Portobello mushrooms per person
Jar of pizza or pasta sauce (chunky is best)
2 ounces shredded mozzarella cheese per mushroom
Olive oil

Spray or brush very large Portobello mushroom caps with olive oil. Broil tops up for about 8 to 10 minutes until soft but not mushy.

Turn them over and fill with about a tablespoon of chunky pasta or pizza sauce. Top with shredded mozzarella cheese and broil until melted and browned.

Remove from broiler and cut in quarters.

Poster's Notes:
I served them with a spinach, carrot, and shredded apple salad with blue cheese dressing and pistachio pudding for dessert.
