Sweet Potato-Zucchini Latkes (P, KLP, TNT)

Yield: 50 small

2 medium sweet potatoes, grated
1 medium zucchini (not peeled), grated
1 medium onion, chopped and sautéed
5 to 6 eggs
2 tbsp. matzo meal
2 springs fresh oregano, chopped
3 tbsp. fresh parsley, chopped
6 springs fresh sage, finely chopped
2 tbsp. course salt
Freshly ground black pepper, to taste

Mix all ingredients in a large bowl using 5 eggs first and see if you think it needs the sixth egg.

Fry as you would regular latkes, I made them small, about 1-1/2 tbsp. of mixture each one.

Poster's Notes:
I did some experimenting in the kitchen on this on Friday and it was well worth it. A savory and sweet twist on the traditional.
