Spinach Latkes (P, KLP, TNT)

Yield: about 12 large latkes

3/4 pound fresh spinach OR 1 10-ounce package frozen spinach
3 eggs beaten
6 tablespoons matzo meal or bread crumbs
Salt and pepper, to taste
3 tablespoons grated onions
Oil for frying

Wash and check spinach carefully. Steam in a tiny amount of lightly salted water for 5 minutes.

Drain well and chop.

Mix with the remaining ingredients and let rest for 10 minutes; form into patties; and drop by tablespoons into hot oil and fry on both sides until golden brown.
