Honey Dijon "Ham" and Potatoes (P, TNT)

Serves: 2 as a lunch dish or 4 as a side dish

4 large potatoes, cleaned, peeled if desired, and cut into 1" cubes
1 onion, chopped
1/4 cup Dijon mustard
1/4 cup honey
1/3 cup corn or canola oil
2 to 3 slices soy "ham" sliced thinly
Salt and pepper to taste

Preheat oven to 350°F.

Combine potatoes and onions in a greased baking dish. In a small bowl, whisk together the mustard, honey, and oil. Pour into baking dish and mix to coat all the potatoes and onions. Add ham slices and mix. Bake uncovered 45 minutes or until potatoes are tender. Stir several times during the baking to prevent at least some of the sticking.

All this talk about meat substitutes reminded me of the other wonderful thing I invented a few weeks ago.

Warning: This will burn if left unwatched and I'm still trying to scrub out my baking dish.
