Zucchini, Baked Italian (D)

Serves: 6

3 cloves garlic, minced
4 ripe tomatoes, chopped
2 to 3 tablespoons olive oil
1 teaspoon sugar
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
Salt and pepper to taste
6 cups (about 3 large) sliced zucchini
2 medium onions, peeled and sliced
1 cup shredded mozzarella cheese
1/2 cup bread crumbs
Romano or Parmesan cheese

Sauté garlic and tomatoes in oil.

Add sugar, oregano, basil, salt, pepper, zucchini, onions, and mozzarella. Mix together.

Place mixture in a greased 9"x13" baking pan. Top with bread crumbs. Drizzle a little oil on top and sprinkle with Romano or Parmesan cheese. Bake 45 minutes in 350°F oven.

Poster's Notes:
You can dice the onions instead of slicing them. Sauté the onions, add the garlic, and then the tomatoes.

You can use parsley instead of basil.

You can omit the bread crumbs.

My sister just sent me this recipe tonight. It includes tomatoes and onions, so I thought it would fit the bill for using up those ingredients. I have not tried this recipe, but my sister only forwards TNT recipes. Hope you like it.
