Tzimmes, Orange Apple (P, KLP, TNT)

Serves: 4 or more

2 lbs. carrots, peeled and sliced
2 apples peeled and diced
1 cup water
1/2 cup orange marmalade
1/3 cup honey
1/3 cup margarine
Grated peel and juice of one orange (or 2 tsp. dried rind and 1/3 cup orange juice)
1/2 tsp. cinnamon
1/2 tsp. salt

Put all the ingredients in a large heavy pot and cover. Bring to a boil, lower heat and cook covered for one hour. Remove the lid and cook for another twenty minutes, stirring occasionally until the carrots are glazed.
