Tzimmes w/Flanken (M, KLP, TNT)
Source: "Spice and Spirit: The Complete Jewish Kosher Cookbook"
Serves: 4

1 lb. stewing meat cut into 1" cubes
1/4 cup chicken fat or olive oil
1 onion, sliced
2 sweet potatoes, peeled and quartered
4 thick carrots, cut into 2" slices
Salt and pepper to taste
1/4 tsp. cinnamon (optional)
Dash nutmeg (optional)
1/4 cup water
1/2 lb. prunes

In a 2-quart saucepan, sear meat in fat/oil over medium flame. Add onion slices, then all remaining ingredients except for prunes.

Cover and simmer 30 minutes. Pour into 2-quart casserole. Add prunes if you're adding them.

Preheat oven to 350°F. Place tzimmes in oven and bake until sweet potatoes become a little crusty and beef is done, about 45 minutes.

Poster's Notes:
I used flanken, because that's what I had on hand. Also, I left the prunes out because I don't like them. I think it could have used some stirring once or twice during the cooking process but it looks great.
