Tzimmes IV (P, KLP, TNT)

Serves: 10

2 pounds sweet potatoes or yams
3 large carrots
6 ounces pitted prunes OR 6 ounces dried fruit
1 20-oz. can pineapple in their own juice
2 tablespoons of brown sugar OR brown sugar substitute to equal 3 tablespoons brown sugar
1 tablespoon cornstarch (I omit)
2 tablespoons lemon juice

Preheat oven to 300°F. Spray a 2-quart covered baking dish with non-stick release agent.

Peel carrots and sweet potatoes and slice into 1/2" pieces. Bring to a boil and cook carrots for 15 minutes. Add sweet potatoes and continue boiling for another 10 minutes (Add more water if needed) or until vegetables are barely tender. Drain vegetables reserving liquid.

Arrange carrots and sweet potatoes in baking dish.

Drain pineapple, reserving liquid. Add vegetable liquid to pineapple juice, to equal 1-1/2 cups. Cook prunes or dried fruit bits in this liquid. Then add pineapple chunks, brown sugar.

If using cornstarch dissolve it in the lemon juice and add to the fruit, stirring until fruit looks glazed.

Spoon fruit aver carrots and sweet potatoes. Cover and bake at 300°F for about an hour basting occasionally, if possible. Serve hot.

I guess you can put cooked matzo balls in if the tzimmes has enough liquid.
