Sweet Potato Gratin, Thanksgiving I (P, TNT)

Serves: 8

4 large sweet potatoes or yams, skinless
4 Rome or Granny Smith apples, cored but with skin on
1 onion, minced and sautéed until translucent
2 ounces maple syrup
2 ounces apple cider
1 ounce melted margarine
1 ounce honey
1/8 teaspoon nutmeg
1/8 teaspoon ginger
1/8 teaspoon cinnamon

Topping:
1 cup corn flake crumbs
1/2 cup granola

Peel and slice sweet potatoes and apples 1/4" thick.

Alternately arrange sweet potatoes and apples in an ovenproof casserole. Top with sautéed onions. Set aside.

In a small bowl, combine the maple syrup, apple cider, margarine and honey with the spices. Pour over the casserole.

Combine topping ingredients, mix well and sprinkle on top of casserole and bake at 350°F for 1 hour. Top should be a golden brown.
