Potatoes, Hash Brown I (Swiss Rosti) (P, KLP, TNT)

Serves: 4

3 large or 4 medium potatoes, peeled
1 medium onion, peeled, halved
1 tbsp. olive oil
Salt and freshly ground black pepper to taste

Using shredder attachment on food processor or by hand, coarsely grate potatoes and onion.

Spray or brush 10" non-stick skillet with oil. Add potato mixture in even layer. Press down with spatula; sprinkle with salt and pepper. Cook over medium heat 8 to 10 minutes or until bottom is browned and crisp. Turn; cook until bottom is browned and crisp, 6 to 8 minutes more.
