4-5 large white potatoes
3-4 tablespoons butter or margarine
5 lightly beaten eggs
1 bunch chopped chives
salt
black pepper
nutmeg

Boil the potatoes and mash them with the fat. Add eggs and chives and season to taste. Spoon into a big pan and bake in moderate heat for 50-60 minutes. Serve immediately.

It should be very light and fluffy, and being in the way of soufflé, it will fall flat after a time so plan your meal carefully. I sometimes add about 1/2 cup grated parmesan, some mixed with the potatoes and some sprinkled on top. Spring onions may be substituted for the chives.

This is more a soufflé than a kugel, and ridiculously easy to make. I don't remember where I got the recipe. It might have been Claudia Roden but I'm not sure, since I haven't looked at the recipe in years. The name is Persian.
