Green Beans and Potatoes (Fasolakia Me Patates) (P)

Serves: 4-6

1 large onion chopped
Parsley or dill to taste
3/4 cup olive oil
1 16-oz. can whole tomatoes
1 tbsp. tomato paste
2 cups water
2 lbs. string beans cut up
Salt and pepper to taste
4 to 5 medium potatoes, quartered

Sauté onion and herbs in oil in large pot. Add tomatoes and tomato paste; simmer.

Add water and beans; cook for one hour, or until tender. Add salt and pepper. Add potatoes and continue cooking until tender.
