Cauliflower, Roasted I (P, KLP, TNT)

Serves: 6 accompaniment servings

1 medium head cauliflower (about 2 pounds), cut into 3/4" pieces
1 large red pepper, cut into 1" pieces
1 garlic clove, finely chopped (I dumped a handful of whole cloves in also)
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon coarsely ground black pepper

Preheat oven to 450°F.

In a large bowl, toss all ingredients until evenly coated.

Arrange vegetables in a single layer in 15-1/2" by 10-1/2" jelly-roll pan (I used foil pan). Roast vegetables 20 minutes or until tender.
