Cauliflower Puree (D, KLP, TNT)

Serves: 4

2 cups cauliflower florets, broken into small pieces
1 teaspoon salt
3 tablespoons finely grated Parmegiano-Reggiano (Parmesan) cheese
1/8 teaspoon cayenne pepper
1/8 teaspoon nutmeg, freshly grated

Boil cauliflower in water to cover until tender. Drain well.

Pour into food processor. Add rest of ingredients and process until smooth.

Serve immediately or reheat before serving. (Thin with a bit of milk if necessary)
