Acorn Squash Stuffed w/Autumn Fruit (P, KLP)

Serves: 4

2 acorn or delicata squash, halved and seeded
1/2 cup fresh cranberries
1 small apple, chopped
1/4 cup chopped raisins
Juice and grated peel of 1 small orange
1-1/2 tbsp. honey
Dash of salt

Preheat oven to 375°F. Place the squash in a baking dish; set aside.

In a bowl, combine the remaining ingredients. Pile this mixture into the squash cavities. Cover the dish and bake until squash is tender, about 25 to 45 minutes, depending on the size and variety of the squash (acorn cooks more quickly than delicata). Transfer to a serving dish.

Poster's Notes:
Delicata squash is a lightly ridged, oblong-shaped squash about 6" to 9" in length. Its skin is ivory and striped with dark green; the flesh is yellow. (I think this is also known as a sweet dumpling or a sweet potato squash in my region.)
