Zucchini And Pasta Soup (M)

Serves: 4

1 onion, chopped
2-1/4 cups zucchini, diced
2 tomatoes, skinned and chopped
6 cups beef flavored broth
3/4 cup spaghetti, broken in small pieces
1/4 cup fresh basil, chopped
1/4 cup parsley, chopped
salt and pepper to taste

Sauté onion until translucent. Add zucchini and tomatoes; cook, stirring constantly for 2 minutes. Add broth and bring to boil.

Add pasta. Stir once and cook for 6 minutes, or until tender.

Stir in herbs and add salt and pepper.
