Vegetable Soup, Healthy I (P, TNT)
Source: a variation of the weight watchers garden vegetable soup recipe.
Serves: 8

1-2 onions, diced
3-4 cloves garlic, chopped
1-2 tablespoon of oil
Half package (16 oz.) frozen mixed vegetables or soup mix
Half a head of cauliflower
5 cups of water
Half cup of marinara sauce
3-4 spoons salsa
1 teaspoon of vegetarian powdered soup mix, (either chicken, beef or vegetable) for each cup of water

Brown onions and garlic first, then add rest of the ingredients. Bring to boil and simmer until veggies are soft, to taste.
