Soba Noodle Soup w/Sesame-Scallion Paste (M)

Serves: 4

Scallion Paste:
6 scallions, white part only
2 cloves garlic, halved
2 tbsp. dark sesame oil

Soup:
8 cups chicken stock
2 cups cooked, shredded chicken
Salt to taste
2 teaspoons Asian Chili powder, or to taste 3 tbsp. soy sauce
1/4 pound Soba noodles, cooked until just tender and drained

Make Paste:
In the food processor with the steel blade, work the scallion and garlic. Add enough oil to form a paste. Transfer to a bowl.

Make Soup and Assembly:
In a large flameproof casserole, bring the chicken stock to a boil. Turn down the heat to low and add the chicken, salt, chili powder, soy sauce and noodles. Heat the mixture just to warm it. Ladle the soup into 4 large bowls. Add a spoonful of the scallion paste and serve at once.
