Lentil Soup, Crockpot (M/P, TNT)

Serves: 6

1 cup lentils (dry)
1 cup chopped carrot
1 cup chopped celery
1 cup chopped onion
2 cloves garlic, minced
1/2 tsp. dried basil
1/2 tsp. dried oregano
1/4 tsp. dried thyme
1 bay leaf
3-1/2 cups vegetable or chicken broth
1-1/2 cups water
14-1/2-oz. can Italian-style stewed tomatoes

Combine everything in the crockpot. Cook for 12 hours on low setting or 5-6 hours on high setting.

Poster's Notes:
Here's a very simple recipe I recently tried; I did not expect it to be an enormous hit, but it was. I imagine it would be just as good cooked on the stovetop as well.
