Salsa Summer Soup (D, KLP, TNT)

Serves: 4

2 6-ounce cans of plain or spicy vegetable tomato juice
1 container mild chunky salsa
1 cucumber, peeled, seeded and cubed
1 8-ounce container plain yogurt
2 tbsp. fresh dill
3 tbsp. fresh mint leaves

Mix together first two ingredients in medium bowl. Chill.

Blend the rest of the ingredients together.

Mix yogurt into the salsa until well blended. Chill and serve. Float a few mint leaves or dill on the top.

Poster's Notes:
For the tomato juice, use something similar to V-8. I made this easy and delicious soup last night.
