Fruit Soup, Moosewood Blender (D, KLP, TNT)

Serves: 4 to 6

3 cups fruit juice
1 banana
1 apple, peeled and chopped
1/2 tsp. dried mint
Juice from 1 lemon
1 peach, peeled and chopped
Pieces of fresh cantaloupe
A couple tbsp. honey, to taste
1 cup yogurt, sour cream or buttermilk
Dash of cinnamon (optional)
Dash of nutmeg (optional)
Dash of allspice (optional)
Dash of sweet wine (optional)

Combine all ingredients in blender.

Thicken with more bananas or yogurt if you like it thick. Add more fruit juice if you like it thin.

Top each serving with yogurt or sour cream and a little fresh mint or a violet or a rose.

Author's Notes:
For the fruit juice it can be unsweetened orange, apple, pineapple, or grape juice.

Unlike traditional Scandinavian fruit soups, which are cooked and contain rich ingredients like onions and garlic and dried fruit, Moosewood's fruit soups are served chilled and are very light.

Moosewood serves as many different fruit soups as it has cooks.

Working with whole fresh fruits and yogurt and a good blender, it's hard to miss. Try your own variations.
