Fruit Soup VII (D/P, TNT)

Serves: 12

1-7/8 cups water
7/8 cup sugar
4 ounces black cherries pitted
4 ounces sliced peaches
4 ounces strawberries sliced
5-1/3 ounces mandarin oranges
3-1/3 tablespoons lemon juice
2-2/3 cups apricot nectar
3-1/2 tablespoons cornstarch mixed into 1/2 cup cold water
2 quarts vanilla ice cream or pareve sour cream

Bring water, sugar, and juice to a boil. Add cold water mixed with cornstarch to the mixture and return to boil.

Add fruit, simmer for a few moments and remove from heat and cool very well.

Just before serving add ice cream and stir until dissolved. Can be simplified by using canned fruits and frozen strawberries.
