Cabbage Soup III (M, TNT)
Source: My sister Judy, from a magazine with no name on the torn-out page
Serves: 8 to 10

6 cups chicken broth
3 tbsp. oil
2 onions, chopped
2 carrots, diced
3 stalks celery, sliced
1 small turnip, peeled and diced
2 cups green cabbage, shredded
2 tsp. dried thyme
Salt
Pepper
Cooked pasta (optional)

Sauté vegetables and add to boiling broth. Simmer uncovered 20 minutes. Add cabbage and thyme; cook 15 minutes more.

Add salt and pepper and pasta.

Poster's Notes:
Judy used thin noodles for the pasta called.

Arrived in almost freezing New York last week from somewhat cool California into sister Judy's apartment which had the most welcoming, comforting aroma. When she told me it was cabbage soup, I wasn't thrilled; but when I tasted it, it was delicious. I'm home one day and the pot is on the stove to replicate it. It is divine.
