Bean Soup, Turkey Sausage (M, TNT)
Source: "The Church Supper Cookbook"
Serves: 6

1/2 lb. bulk turkey sausage
1 to 2 tsp. oil for browning
1 onion, chopped
1 14 oz. can pinto beans
1 14 oz. can canned tomatoes
2 cups water
1 small green pepper, diced
1 bay leaf
Salt, pepper, thyme, garlic salt, etc. to taste

Brown sausage in oil. When sausage is browned, add onion and sauté until translucent.

Add all remaining ingredients and bring to a boil, stirring occasionally. Reduce heat, cover, and simmer, stirring occasionally and adjusting seasonings as needed, for 1-1/2 hours.

Poster's Notes:
This recipe as it originally appeared in The Church Supper Cookbook also included one potato, diced. It proved unnecessary and the soup was delicious and plenty thick without it. I brought this to a potluck this afternoon and received rave reviews.
