Sweet Potato Chips, Carolina Brewery's (P, KLP, TNT)

Vegetable oil for frying
2 medium sweet potatoes/yams
2 tbsp. light brown sugar

Preheat oil in a deep fryer or deep, heavy pot (do not fill pot more than halfway with oil) to 360°F.

While oil is heating, scrub sweet potatoes/yams, but don't peel them. Using a mandoline or food processor, slice the sweet potatoes very thinly.

Steam or parboil the slices about 5 minutes, until they soften and darken slightly. DRAIN/DRY *VERY WELL*.

Working in batches so as not to crowd the fryer, fry the chips, pushing them down with a slotted spoon as necessary to keep them submerged in the oil.

Fry about 5 minutes, until lightly browned and crisped. Toss with brown sugar while still warm and serve immediately.
