Knishes, Potato OR Potato Wrapped Franks (D/M/P, KLP, TNT)

Serves: About 12, depending on size

2 cups plain mashed potatoes
1 egg or 2 egg whites
1/4 cup finely minced onion
1 teaspoon salt
1/4 teaspoon pepper
1 cup matzo meal
3 tablespoons potato starch

Do not use a food processor to mash the potatoes. A ricer or a hand potato masher works better to give you a stiffer consistency.

Mix all the ingredients together and place in the refrigerator for at least an hour so the mixture is nice and cool and holds together.

Break off golfball-sized pieces and flatten in the palm of your hand. Fill with a chunk of hot dog or your favorite knish filling.

Place on a lightly greased baking sheet and brush lightly with any vegetable or olive oil. Bake at 350°F until golden brown.
