Alfredo Sauce II (D, KLP, TNT)
Source: An Italian cook I know
Yield: Enough to cover 1 pound of fettuccini noodles (serves 3 to 4)

1/2 pound butter
1 pint heavy cream
1 cup Locatelli cheese (Romano), grated
Black pepper

Melt butter in saucepan. Add cream and then cheese until melted. Mix with pasta. Add some cheese and black pepper on top of each serving.

This recipe was given to me by a wonderful Italian cook. In my notes below, I've adjusted it to reduce the cholesterol and calories, but will first give you the basic recipe.

I've adjusted the recipe by using half and half instead of the cream. Once you've made it or had it in a restaurant, its just as easy to reduce the entire recipe for the amount of pasta you may want to make. I generally use a few tablespoons of butter, add some half and half, and spoon the cheese in until I have the desired consistency and amount since I'm normally making it for two of us.
