Watermelon and Watercress Salad (P, TNT)

Serves: 4

2 tablespoons rice vinegar
1-1/2 tablespoons vegetable oil
2 teaspoons minced ginger, peeled, FRESH
1-1/2 teaspoons grated lime rind
1 clove garlic, minced
2 cups seedless watermelon, 1/2" pieces
1 bunch watercress, large, 2 cups packed
1 cup seeded cucumber, 1/2" pieces, peeled
4 green onion, thinly sliced diagonally
1/4 cup chopped fresh cilantro

Whisk vinegar, oil, ginger, lime peel, and garlic in large bowl to blend. Season to taste with salt and pepper.

Add watermelon and all remaining ingredients to bowl with dressing and toss to coat. Divide salad among 4 plates and serve.
