Spinach Nut Salad, Curried I (P, TNT)
Source: "Expo86 Cookbook," as modified by my aunt Debbie
Serves: 4

Salad:
1 bunch spinach, washed and dried
1 Granny Smith apple, chopped
1/4 cup chopped green onion
1 cup honey roasted nuts

Dressing:
1/4 cup lemon juice
2 tbsp. red wine vinegar
1 tsp. curry powder
1/8 tsp. cayenne
1/4 tsp. turmeric
1/2 tsp. salt
1/2 tsp. sugar
3/4 cup vegetable oil

I blend the vinegar and spices with my moulinex hand blender. Gradually add 3/4 cup vegetable oil and blend until smooth.

Toss with salad and serve immediately.

Poster's Notes:
I just changed the nuts to honey roasted instead of plain roasted.
