Potato Salad I (D, KLP, TNT)

Serves: 6-8

2 lbs. potatoes
1 cup mayonnaise
A few teaspoons milk to lighten up the mayonnaise
2 to 3 pickled cucumbers (KLP)
1 tbsp. oil
1 tbsp. cider vinegar
Salt
Sugar
Parsley
2 Granny Smith apples
2 oz. nuts or something similar

Wash and brush the potatoes carefully. Prick with a fork and cook with the peel, in the microwave, for about 6 minutes on each side.

When cooked, remove the peel and let cool. Cut into cubes.

Make a vinaigrette with the oil, vinegar, salt, and sugar to taste. Add to the potatoes.

Cube the cucumbers, apples, and nuts. Mix in.

Beat the mayonnaise with some milk and add to the potato mix. Sprinkle with finely chopped parsley and refrigerate for a few hours.
