Greens and Fruit w/Lime Vinaigrette (P, KLP)

Serves: 12

1 cup vegetable oil
1-1/2 cups fresh lime juice
2 teaspoons sugar
16 cups mixed baby greens
5 kiwi fruits, peeled, cut into wedges
4 oranges, peeled, white pith removed, fruit sliced into rounds
2 cups jicama, peeled and cut into 1/2" pieces
1 cup red onion, thinly sliced
1 cup pine nuts, toasted
2 avocados, peeled, pitted, diced

Stir first 3 ingredients in small bowl until well blended. Season dressing with salt and pepper.

Mix remaining ingredients in large bowl. Add half of dressing to bowl and toss to coat. Serve, passing remaining dressing separately.
