Wheat Berry Waldorf Salad (P, TNT)
Source: Oasis "Cooking with Grains" class
Serves: 4

Wheat Berries:
4 cups water
3/4 teaspoons salt
1 cup wheat berries (hard winter wheat)

Salad:
2 tablespoons walnuts, toasted and chopped
2 tablespoons pine nuts, toasted and chopped
1 Gala apple, finely diced
1 jicama, finely diced
1 rib celery, thinly sliced
1/4 cup dried cranberries
1/4 cup dried currants
1/4 cup golden raisins
2 green onions, thinly sliced

Dressing:
3 tablespoons rice vinegar
3 tablespoons fresh orange juice
3/4 teaspoon freshly grated orange zest

Garnish:
2/3 cup packed fresh mint leaves, optional, chopped

Make Wheat Berries:
In a saucepan, bring water and salt to boil; add wheat berries.

Cover, reduce heat and simmer for 1-1/2 hours or until tender. Drain wheat berries in a colander and cool to room temperature.

Assembly:
Toss wheat berries with apples and jicama in a large bowl. Add all remaining ingredients, and then dressing ingredients and toss together.

Garnish:
Garnish with mint.

Poster's Notes:
Here's one I got from a "Cooking with Grains" class given by Oasis--an organization that gives classes for people over 50! This is really delicious and healthful too.

I prepare all the ingredients, except the apple, the day before, then I chop the apple and assemble the salad shortly before serving. I believe it serves 4, but maybe more depending on what else you're serving.
