Kasha Salad  I (P, TNT)

Serves: 6-8

2-3 cups cooked kasha
1/4 cup lemon juice (fresh)
1 cup parsley, chopped very fine
2 tablespoons fresh mint leafs, chopped fine
1 cup green onion, cut small pieces
1 big or 2 peeled tomatoes, cut into small pieces
some pickled cucumber, cut into small pieces (optional)
1 garlic clove, crushed very fine
salt and freshly ground pepper

Mix all the ingredients in a salad bowl. Serve with any main dishes you like. Simple and good.

Poster's Notes: If you are not allowed to eat eggs, you can use only the egg white when preparing kasha. You can add and fry onions before adding the grain to the saucepan, and continue as written. I buy the toasted kasha grain. If you got the green one, it is not toasted yet. So what you can do: toast them before use, in a toaster oven for about 20-30 minutes shaking pan so grain will be toasted all over, in a medium low oven. Cool before cooking.
