Cole Slaw, Healthy (P)

Serves: 4

1 lb. shredded cabbage mixed with a little red
1 carrot grated
2 green onions sliced
2 slices red onion diced
2 tbsp. sweet red pepper, diced

3 tbsp. oil
1/3 cup vinegar
2 tbsp sugar
1/2 tsp. dry mustard
1 tsp. kosher salt
1/2 tsp. celery seeds
1/4 tsp. black pepper

Mix dressing ingredients in a Pyrex 2-cup measure. Warm it up, but don't boil.

Mix all ingredients, cover with plastic and refrigerate for a few hour before serving. The spices can be adjusted suit your taste.
