Carrot and Parsley Salad (P, KLP, TNT)
Source: "Not Potatoes Again!"
Serves: 6-8

3-1/2 cups grated carrots
1 bunch parsley, chopped
1 clove garlic, minced
3 tbsp. lemon juice
1/4 cup olive oil

Combine the carrots, parsley, garlic, lemon juice, and olive oil. Add salt and pepper to taste.

Poster's Notes:
I've started giving some thought to Pesach and this salad is one of my standbys. My DH doesn't like sweet carrot salads, but this one has a nice tang to it, and the parsley just makes it taste like Pesach to me. (Not to mention a good way to use up the rest of the bunch that we never seem to eat much of for karpas)
