Broccoli Slaw I (P, TNT)

Serves: 6 to 8

2 packages broccoli slaw mix, found in the produce section of your grocery store
1/4 to 1/2 cup chopped scallions
1 4-oz. package slivered almonds, toasted on a cookie sheet
2 packages ramen-type noodles
1/2 cup vegetable oil
1/2 cup sugar
1/2 cup white vinegar

Mix seasoning packages from the ramen noodles with the oil, sugar, and vinegar. Shake well and refrigerate.

To toast the almonds: Spread almonds out on cookie sheet. Bake in preheated 300°F oven for 10 minutes, or until lightly browned. Watch carefully so they won't burn.

Place the 2 packages of the broccoli slaw mix in a large bowl, add crushed ramen noodles and scallions. Pour dressing over it all and marinate in the refrigerator. It is best to do this early in the day to give the noodles a chance to marinate and get soft.

Just before serving sprinkle on the toasted almonds.
