White Beans w/Apple (P, TNT)
Source: "Polak & Polak," an old cookbook
Serves: 4-6

250g (1/2 lb.) dry white beans
400g (about 1 lb.) dry apples
75g (2-1/2 oz.) white sugar
50g (about 2 oz.) butter or margarine
2 teaspoons salt
1-1/2 teaspoon cinnamon
1 teaspoon lemon zest

Put the white beans in water overnight.

Put the apples in water 4 hours BEFORE using.

Next day add water to the beans and put on medium fire for 1 hour, then add apples, salt, lemon zest, cinnamon, sugar, butter, and let cook on low fire until apples are soft.

Tip: Use in the place of dried apple 1-1/2 kg. (about 3 lbs.) peeled, fresh apples, cut in 4 and cook them for 15 minutes with the beans, Maybe you can also use white beans (without tomato sauce!) from a tin.
