Rice, Grecian Spinach I (P, TNT)

Serves: 4-6

2 cloves garlic, finely chopped
1-2 tbsp. oil
1 cup rice
1 10-oz. package of frozen chopped spinach
1 8 oz. can tomato sauce

Lightly cook the garlic in the oil until very lightly browned. Be careful not to burn. Add rice and stir until coated with the oil.

Add the frozen spinach and the can of tomato sauce. Cover tightly and cook on a low flame until rice is cooked, stirring occasionally so that it doesn't burn. The moisture from the spinach should be sufficient for the rice. If not, add a little bit.

Poster's Notes:
My family loves this dish. It is real easy to make. Can be left on the blech for Friday night.
