Rice Casserole w/Vegetables (M/P, TNT)

1 cup white or brown rice
4 cups broth, homemade or mix, meat or vegetable, heated
1 to 2 cups vegetables, chopped (onion, peppers, broccoli, mushrooms, or whatever)
1 tablespoon olive oil

Oil a large casserole or baking dish. In it, stir together all the ingredients.

Cover dish and bake in a slow oven for 2 hours or so, until broth is absorbed.

When making for Shabbat, use brown rice and bake for 30 minutes before you turn down oven or turn to Shabbat mode, adding water or broth as needed to keep it from going dry.

Poster's Notes:
I often make a rice casserole, with white or brown rice.
