Quinoa, Southwestern Style (M/P, KLP, TNT)

Serves: 4 as a side dish

1 cup quinoa, rinsed well in a colander
1 tablespoon olive oil
2 cups vegetable or chicken broth (depending on if you want it pareve or not)
1 can diced tomatoes and chilies with lime and cilantro
1 cup diced zucchini
1 cup diced yellow squash
1/2 cup sliced mushrooms
Pinch salt

Rinse the quinoa well in a colander until the water runs clear.

Heat your pot and add the olive oil to medium high. Toast the quinoa in the olive oil for about 2 minutes while stirring it.

Add the broth and the tomatoes with the juice and simmer covered for 15 minutes at a lower temperature.

Add the squash, mushrooms, and zucchini and simmer for another 10 minutes or so until just about all the liquid is absorbed and the texture is fluffy. The quinoa will become somewhat transparent. Taste it and adjust the seasoning with salt if needed.
