Caramelized Onions:
1/4 cup olive oil
3 large onions, halved and sliced
3 tsp. sugar
1 tbsp. balsamic vinegar
1/2 cup water
Lentils and Rice:
1 cup (200g) brown lentils
2-1/2 cups water
1/2 cup white long grain rice
1 tsp. ground allspice
1 tsp. ground coriander
1 tsp. salt
1 tsp. freshly ground pepper
Make Caramelized Onions:
Heat oil in pan, add onions and sugar. Cook, stirring, 5 minutes.
Add vinegar and half the water. Cook stirring, 10 minutes.
Add remaining water, cook about 5 minutes or until onions are caramelized.
Make Lentils and Rice and Assembly:
Combine lentils and water in a medium pan. Simmer, uncovered, about 25 minutes until tender.
Add rice, extra water, spices, salt, pepper and half the caramelized onions.
Simmer, uncovered, stirring occasionally, about 15 minutes or until rice is tender.
Serve warm or cold, topped with remaining caramelized onions.
Poster's Notes:
Serves 4--but I've served more and think this is a generous serving.
Can be made a day ahead. Store covered in refrigerator.
