Relish, Thai (P, KLP, TNT)

Yield: 2 cups

1/2 cup vinegar (I use natural vinegar)
1 cup sugar
1 tsp. salt
3 tbsp. water
1 small onion diced fine
1 small carrot diced fine
1 medium sized green cucumber finely chopped
Fresh coriander leaves (cilantro), chopped

Boil vinegar, sugar, salt, and water in a saucepan for 1 minute.

Mix onion, carrot, and cucumber pieces in a bowl and pour the syrup over until vegetables are just covered. Taste to see if extra vinegar, sugar or salt is needed.

Those who prefer spicy, may add a finely chopped chili pepper.

Poster's Notes:
This relish is easy to make and lots more tasty on a hot dog than the bland commercial stuff.
