Relish, Onion (D/P, TNT)
Source: Based on a recipe in "The Yellow Farmhouse Cookbook," by Christopher Kimball
Serves: Varies

4 tbsp. butter, softened (I used margarine for pareve)
3 tbsp. extra virgin olive oil (I used vegetable oil for a milder flavor)
6 large onions sliced using thin slicing blade of food processor
4 to 6 tbsp. sugar (you'll have to taste. Some onions are sweeter than others)

Heat a large heavy skillet over medium heat. Add margarine and oil. Add onions and lower heat. Cook, stirring occasionally, until the onions are caramel color. This takes a while, about 30 to 45 minutes.

Add sugar a spoon or two at a time and mix. Continue cooking a few more minutes until the onions are good and brown. You'll know when they're done.
